One of my favorite little meals to make and eat is my “Power Pancakes" aka “Protein Pancakes”.
Like most my recipes, this is how I do it and you can most certainly add, erase, and/or substitute as you please.
Use my recipes as foundations from which to build and create your own!
A template so to speak.
You know you thought that was me!
MIKE’s POWER PANCAKES:

🥞Pancake batter. Lately I’ve been using this brand from Trader Joe’s which is super clean (only 1 added sugar) but I’ll also use Kodiak Power Cakes - Flapjack & Waffle Mix which has more protein.
I never measure, just dump as much as my soul tells me to which if I had to guess is a little over a cup, 1.5 cups at the very most.
💪🏽Protein powder. I usually use my favorite brand, Orgain but I’m currently out (and waiting on my next shipment) so this is my backup. Also super clean and great flavor. With this particular flavor of pancakes I use vanilla flavored protein powder.
Usually just use one heaping scoop.
🍥Yogurt. Adds to the fluffiness and to the protein, not to mention the other benefits I’ve mentioned in previous newsletters!
Never measure here either, but would guess it’s about 2/3 cup.
🧀Cottage cheese. Again, adds to the texture and to the protein because, you know, gainz.
Nope, don’t measure this either. Notice a pattern? Yeah, I like to live life on the edge. Would guess this is about ½ a cup, maybe a little more.
🍯Cinnamon. Adds to the flavor baby! And don’t forget cinnamon is not only an antioxidant and anti-inflammatory along with many other health benefits, it is also a natural thermogenic!
Never ever measure this either, this one I just dump in the mix until I feel happy.
🫐Blueberries. Adds to the flavor and health benefits! Love me some blueberries, I’ll pour the batter, then slap a few blueberries on each cake, then flip and cook the other side!
🥚Eggs. Not pictured but I’ll also throw in two whole eggs to also add to the protein!
🥛Almond milk. Also not pictured but I’ll add as much almond milk until I like the consistency of the batter. I like mine thicker because I like my POWER PANCAKES like I like by wife and burgers— thicc thicc.
All of the above ‘measurements’ made me 8 medium sized pancakes today. Ate two with my breakfast and snacked on the other 6 throughout the day.
My pancakes don’t always look good but damnit do they taste good!
95% of the time I don’t use syrup, I eat them just as they are with nothing added. Because I’m a savage.
PRO TIP:
Switch the vanilla protein powder out for chocolate flavored and switch the cottage cheese with peanut butter and you have yourself some chocolate peanut butter pancakes!
